WAHOO (ono)  Among the fastest fish in the gulf, Wahoo can swim approximately 50 mph and can make a 90 degree turn in the length of its body, which can exceed 6 feet.  The flesh of Wahoo is extremely white and tasty, excellent table fare.

RED SNAPPER  Hook up to a large "sow" snapper and you're in for one hell of a fight.  Red Snapper are world famous for their delicious white meat.

DOLPHIN (mahi-mahi) Fast and acrobatic fighters, Dolphin are the most entertaining to catch.  Their skin will become "lit-up" with striking green, blue and yellow colorations when excited, making for great photos.  This fish is excellent on the grill.

AMBERJACK Lock horns with one of these guys and you better be ready, you're in for a slugfest.  Amberjack routinely win their fights against grown men.  Lines don't break, hooks don't pull out, they simply whip their opponent.  When you catch one of these fish, you have done something.  I would rate them as good table fare.

GROUPER  Pulling a grouper in has been described as something similar to reeling in a Volkswagon.  Everybody knows grouper is great on the grill, fried, or any other way you can think of to cook it.

TRIGGERFISH  These are probably the ugliest fish in the gulf, but a local favorite to eat.

 Triggerfish
YELLOWFIN TUNA (ahi)  Now this is a back alley brawler, much like an Amberjack only bigger, stronger and faster.  They commonly reach 150 lbs.  Yellowfin are "sushi grade" tuna, great for ceviche, sashimi, sushi, and excellent on the grill.

BLACKFIN TUNA  Extremely fast and strong fighters, Blackfins are found swarming in schools and can fill up the fish holds in a hurry. These fish are great for a dip, smoked, sauteed, and excellent on the grill.

KING MACKEREL  Fast and furious fighters, kings hit like freight trains and make long blistering runs after being hooked.  Smaller kings are good on the grill or smoked, but larger kings become strong flavored and oily.  Only kings small enough to be enjoyed as food will be harvested.

COBIA  Cobia are hard fighting, heavy fish that never seem to give up the battle even after they're boated. Brown to black colored with no teeth, short spikes on their backs and plenty of "BIG FISH" attitude.  Great on the grill or fried, and one cobia fills up lots of grill space.

 SPANISH MACKEREL  These "spunky" little fish are great for lighter tackle.  Usually not more than 10lbs they suffer from "little man" syndrom  making them faracious feeders and ill tempered.  If Spanish grew to 50lbs I'd be scared to catch one .  They are great baked, broiled or grilled.

 Spanish Mackerel
REDFISH Known as a fish that will not quit, redfish can be absolute brutes. And as such, they have become one of the most sought after fish in Gulf Coast waters. Due to conservation efforts Redfish are especially abundant and large throughout the FL panhandle and Alabama coastlines. Redfish are delicious, but most are returned to the water to fight another day.
